Observation: Ice machine had brown residue on the inside wall.
Correction: Discard ice and clean and sanitize the inside of ice machine as per manufacturer's instructions.

Comments

- Required cleaning has been completed. Continue to work on regularly maintaining a higher level of sanitation at all times.
- Food storage room has been organized. Rice bags are now stored on shelves.
- Damaged counter edge under miso soup urn has been replaced.
- Operator has obtained a new ice scoop. Stainless steel ice scoop is in good working condition.

- Operator advised that menus have been reprinted to reflect that "Tai" (Red Snapper) is no longer offered. Ensure that all food offered to the public is represented by its true name. Do not mislead customers.
