Observation: Premises observed dirty and under maintained. Accumulations of debris, food, and/or food residues most noteable in the following areas:
- Keg cooler floor/shelves;
- Walk-in cooler floor/shelves/walls;
- Entire floor and area behind/below friers and cook line;
- Dishwash pit;
- Dry food storage bins - panko, chicken coating, fish dust, wing dust;
- Walls in several parts of kitchen;

Corrective Action(s): These areas must be properly cleaned up by re-inspection date noted on report.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Several of the large KQuats spray bottles causing odd reaction to test strips. Likely not Quats. Spray bottles themselves are very dirty and old.
Corrective Action(s): Ensure only Quats at proper concentration (200 ppm) are used and available for use. Discard old spray bottles or soak them clean. Smaller quats bottles dispensing proper concentrations (200 ppm). Review all quats spray bottles accordingly. This will be reviewed at follow-up inspection date noted on report.

Observation: Lights in walk-in cooler and keg cooler not functioning adequately. Too dark in these areas and clearly affecting proper cleaning.
Corrective Action(s): Fix lights and ensure lighting is sufficient in these areas.

Comments

Ensure all handwash stations including employee washrooms are always stocked with liquid soap and paper towels.
