Walk in cooler looks outstanding. Keep that up. Back of facility looks pretty good too. Areas to focus cleaning: - around and floor below chemical/dirty dishes shelves. - Behind legs under counters in front area (overall not bad). - Ice machine, outside and at door slide (daily to keep flaking plastic from door under control and not get into ice reservoir. Cooling temps less than 4 C. Hot holding above 60 C. Quats at 200 ppm - at dispenser and in sani-buckets. Handwashing facilities good.
