302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Wiping cloths were found at the grill station and at the front serving station. Bacteria can multiply rapidly on wiping cloths, which can be transferred onto food contact surfaces.
Corrective Action(s): Ensure all wiping cloths are fully submerged inside a labelled container containing sanitizer. Change the sanitizer solution at least every 2 hours. Replace visibly soiled wiping cloths with clean wiping cloths when visibly soiled.The operator placed all wiping cloths inside buckets at the grill station and the front serving station at the time of inspection.

Observation: 1. Raw chicken was stored beside gravy inside the walk-in cooler next to the grill.
2. A plastic container with no handle was found inside the flour bin
Corrective Action(s): 1. Raw meat must be stored underneath cooked and ready-to-eat foods to prevent raw meat juices from contaminating the product. Corrected during inspection: the operator moved the gravy to a different shelf.
2. Ensure to use a scoop with a handle to avoid indirect hand contact with the flour.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): A rubber spatula is observed to be cracked. Bacteria can build up inside the cracks of the rubber spatula. Bits of rubber could fall into the food
Corrective Action(s): Ensure to use all utensils and equipment that is smooth and non-porous so that it can be properly cleaned and sanitized. The operator discarded the spatula.

Comments

Routine inspection conducted. The following observations were noted:

Administrative
- Permit to operate is posted in a conspicuous location
- 4 staff have FOODSAFE Level 1. At least one person on duty is FOODSAFE Level 1 certified

Handwash stations and employee hygiene
- All handwash stations are unobstructed
- All handwash stations are supplied with hot and cold running water, liquid soap, and paper towels
- Employees demonstrated excellent personal hygiene practices.
- Employees wash their hands frequently

Temperatures of coolers, freezers, and hot holding units
- 2 walk-in coolers are 4C or below
- All freezers are -18C or below
- All other coolers are 4C or below
- Hot holding unit containing gravy is 60C or above

Sanitation
- 100 ppm chlorine was detected inside the chemical dishwasher upon final rinse cycle
- Concentration of QUATS sanitizing solution from the sanitizer dispenser is 200 ppm
- Ventilation hoods are kept in a sanitary condition. Operator cleans vents once a week
- Frequently used utensils (e.g. tongs) are placed in a bucket of ice water. Utensils cleaned and sanitized at least every 4 hours.
- No signs of pest activity at the time of inspection. Facility has bimonthly inspections from Buyman Pest Control. Last three reports state no pest activity.
- All equipment is made of food grade material
- General sanitation of the facility is satisfactory

Storage
- Cleaning agents are clearly labelled and stored separately
- Food products are stored at least 6 inches off the ground

Additional comments
- Light bulbs are protected by a shatterproof cover
- NOTE: Set of lights next to walk-in cooler by grill station is missing shatterproof covers. Operator said shatterproof covers will arrive next week.
- Washrooms available for customers have hot and cold running water, liquid soap, and paper towels
- Smooth white surfaces were installed around the dishwashing sinks

Recommendations:
- Place steel wool/expanding foam around the pipes by the dishwasher and 2 compartment sink to reduce the potential of pests entering the premises
- Ensure to do a thorough clean behind hard to reach areas, especially by the grill station frequently
- Operator aware that floor in grill station needs to be resurfaced. Has plans to do resurface during a slower season (after the summer).
