Bleach sanitizer available for use for sushi bar.
Sushi bar display cooler, under the counter cooler and preparation cooler at or below 4 degrees C.
Sushi rice acidified to approximately pH 4.0.
Beverage cooler at 3-4 degrees C.
Serving area under the counter cooler at 1-3 degrees C.
Rice and miso soup hot held above 60 degrees C.
Bleach sanitizer solution also available for use in labeled spray bottle.
Sliding glass door cooler at 4 degrees C.
Preparation cooler with inserts at or below 4 degrees C. Lower section at 3 degrees C.
Fish observed thawing under cold running water.
Kitchen hand sink provided with liquid soap and paper towels. Discussed with operator the relocation of the paper towels dispenser. Its current location does not facilitate frequent hand washing.
