Corrective Action(s): In order to maintain food ingredients at 4 C or colder - top food insert containers cannot be overfilled or double stacked. Extra containers are to be stored below inside the cooler.

Wiping rags in use, not stored in sanitizer containers.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Observation: Newspaper used to line counter and shelves around deepfryer.
Rice scoop and sushi knives stored in stagnant water.
Opened take-out containers stored right side up.
Corrective Action(s): Discontinue using newspaper to line surfaces, single use papertowel may be used in place.
Do not store food utensils in stagnant water. Food utensils in use can be stored dry and rinsed as needed or in refrigerated water 4 C.
Ensure single use, take-out containers when removed from protective packaging are to stored upside down to protect from contamination.
