Observation (CORRECTED DURING INSPECTION): Chicken was cooked at 11am and was left at room temperature to cool at 25C (4 hours). Discussed proper cooling procedures with staff. Chicken was discarded by staff at time of inspection when notified.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Multiple pizza dirty trays were stored inside large movable wooden bin. Bin had caked on grease and felt sticky to the touch.
Corrective Action(s): Wash and sanitize the trays properly. Wash and sanitize the bin.
Correction date: 1 day.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: As noted in previous inspection report, dishes and utensils were still washed in mixture of detergent and bleach solution in a large container and rinsed off and air dried. Discussed proper washing procedures with staff (wash with detergent, rinse with water, soak into 100ppm bleach sanitizer for at least 2 minutes). The containers did not seem to be big enough to hold and immerse the largest item. Sink plugs were provided when operator was notified however plugs were not the right size.
Corrective Action(s): Provide sink plugs of the right size. In the interim, use the current plugs with a clean towel.

Observation (CORRECTED DURING INSPECTION): Back door (outer door) was opened at time of inspection. Inner door was closed but there was a vertical gap along the side big enough to allow pest entry. I closed the door.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas requires cleaning:
-Parchment papers and cardboard were lining the top of the oven and were caked on with grease.
-Food debris caked onto the sides of the oven.
-Fronts of the cooler doors (two prep coolers), the lids, the back of the lids. (had drips and food debris)
-The paper towel dispenser.
-Bottom of walk-in cooler
-Fan had dust bunny hanging while in use and facing kitchen.
-Fan guard above oven requires cleaning (had dust bunnies hanging down)
-Handle and door front and bottom of the stand-up freezer next to pizza prep cooler.
-Tray holding mutliple spices requires cleaning at the end of day.
-Plastic spoon was noted on the floor in the back storage area.
Corrective Action(s): -Remove all parchment papers and cardboard. Degrease the surface of the oven.
-Remove food debris from the ovens and clean and sanitize the surfaces of the oven that have food debris.
-Clean and sanitize all of the above mentioned areas.

Observation: The large bin holding the multiple pizza trays underneath the oven were damaged and had exposed raw wood.
Corrective Action(s): Repair the damaged surfaces of the bin so that it is smooth and flat. Clean and degrease the surfaces of the bin and repaint it to provide a smooth, easily cleanable, non-absorbent surface.

Handsink fully stocked with hot and cold running water available.
-Prep cooler, insert level: air at -3.2C under the inserts (foods ranges from 4C to 9C - because lid was open- instructed staff to keep lid closed), Bottom: 3C.
-Walk-in cooler 3C/4C
-Defield prep cooler 4C
-Chest freezer -9C/-18C.
-Frigidaire Freezer -22C/-23C
-Domestic standing freezer (used for thawing of food) ranges 0C to 4C.

-Sanitizer spray bottle ~ 200 ppm chlorine detectable. Solution remixed at 100ppm chlorine.

*plastic containers and their lids were broken and were discarded at time of inspection by staff.
