Observation: Meat slicer found left overnight with heavy food debris. A correction order has already been issued for this violation. Spot checks will be done with violation tickets issued for noncompliance
Corrective Action(s): Without exception, this machine must be cleaned after use, or at least every 4 hours if in continuous use.
Unplug, disassemble, wash with warm soapy water (and a brush), then rinse, and sanitize with food grade sanitizer.

Observation: Fruit flies found eating from sauce squeeze bottle.
Many products in walk in cooler without lids.
Double stacked sausage pieces at inserts in prep table.
Corrective Action(s): Control your fruit fly problem with excellent sanitation and preventative measures.
Use food grade lids on all products
Never double stack food inserts or containers.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies found throughout premise, with a large concentrations found at hand sink (pineapple in drain) and at sauces near prep cooler
Corrective Action(s): Good sanitation will prevent flies. Keep your sauce in the cooler to protect from flies, and immediately wipe up spills.
Clean out your drains nightly, recommend pouring some bleach down to prevent breeding.
Wipe up food debris, juices, sauces, etc from all floors, counters, and containers.
Deadline: Immediately.

Observation: Screen door found with bottom panels ripped/ hanging loose
Corrective Action(s): Repair your screen door so it can prevent pest entry.

Observation: Flour pile has gotten so large near dough roller that it reaches the bottom shelf of your work tables in two locations.
Tomato (?) underneath a work table has been left so long it has decomposed into the floor.
Corrective Action(s): DAILY sweeps must be occurring.
Spills must be promptly wiped up.

Observation: Prep cooler again malfunctioning - condenser unit visibly frozen. Measured 7C throughout at time of inspection
Corrective Action(s): Use the top inserts for small portions of food only. Have the inserts used up within 2 hours, then discard leftovers as they have been temperature abused.
Operator voluntarily discarded two small inserts of meat product stored from last night.

Temperature records were not available for review. These must be completed, especially given the poor working history of your pizza prep cooler.
Sanitizer bucket found mixed with soap. Never mix chemicals. Use soap first, rinse, then sanitize. For your rag bucket, use only sanitizer (bleach).
