Observation (CORRECTED DURING INSPECTION): Quaternary ammonium compounds (quats) sanitizer was not detected in third compartment of manual ware washing sinks, nor was it detected in sanitizer pail at front. When staff changed the sanitizer at the dispenser, sanitizer was still not detected in the solution. Sanitizer concentrate did not appear to be running through the line at the dispenser.
Corrective Action(s): Sanitizer was prepared manually by staff and measured at 200 ppm quats. Test strips (within expiry) are available on site to verify concentrations. Ensure that sanitizer is maintained at concentrations needed for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Ensure that all equipment is re-sanitized today.

- Freezer at -18 degrees C or less
- Hot holding internal temperatures at 60 degrees C or more
- A probe thermometer is available on site for internal temperature checks
- Prepped food is properly covered
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Equipment and utensils are stored away in clean condition
- FOODSAFE requirements met at time of inspection. FOODSAFE certificate produced for staff member on site expires in 2023.
- Temperature logs are up to date.
- Permit posted at front
Note: A couple of flies were observed at time of inspection. Ensure sandwich tables are promptly covered following use. Pest control measures (e.g. fly light) in place.
