Observation (CORRECTED DURING INSPECTION): Sanitizer buckets in service area had 100ppm QUATS solution.
Corrective Action(s): Ensure sanitizer solutions in buckets are changed regularly hours to maintain concentration at 200ppm QUATS. It needs to be at this concentration for proper disinfection of food contact surfaces.

Observation (CORRECTED DURING INSPECTION): Employee in kitchen touched garbage can then touched food with her hands.
Corrective Action(s): Discarded the food item and employee was asked to wash hands. Ensure hands are washed whenever returning to food preparation to prevent contamination of foods.

Observation: 2-3 mouse droppings were found in the cabinet under beer dispensers in the bar area.
Corrective Action(s): Clean mouse droppings by soaking the surface with 1 in 10 bleach solution, let it sit for 5 minutes then wipe up with paper towel and put in plastic bag to discard. Contact pest control company to keep monitor for pest activity.

Observation: Cabinet under the beer dispensers had a half sealed hole where pipe is run through it.
Corrective Action(s): Contact pest control company to deal with the hole and keep monitoring for pest activities. Keep pest control records on-site.

Observation: 1) Pizza prep cooler was broken at the time of inspection. Foods on top inserts and inside were stored on ice.
Corrective Action(s): Manager contacted technician prior to inspection. It is being fixed. Continue to keep small amounts of food on ice and monitor food temperatures to prevent temperature abuse.

Comments:
-Walk-in cooler: 2-3C.
-Prep line coolers were at 0-2C.
-Bar cooler was adequate. Only small amount of cut fruits stored inside which is used quidkly (PH of those fruits are <4.6). Everything else are drinks.
-All freezers are adequate, Foods were frozen solid.
-Hot-holding units were at 60C or above.
-Temperature logs were available.
-Thermometer for checking food temperatures were available.
-Chemical dishwasher final rinse at plate's level was 100ppm.
-Handwash stations were supplied with liquid handsoap, single-use paper towels and hot & cold running water.
-QUAT sanitizer dispenser were at 200ppm. Pails in kitchen at 200ppm. Spray bottles at 200ppm.
-Food storage was good. Raw meats below ready-to-eat foods. All foods in food grade containers and off the floor.
-Ice machine was clean. Scoop stored separately in sanitary condition.
-Permit is posted conspicuously.
-Pest control services were found. Manager stated pest control service was due today.
