This must be turned on for hand washing at all times. Corrective Action(s): Ensure that this hand washing sink is always available for use, especially since it is the only dedicated hand sink in the kitchen. Violation Score: 5

Comments

All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. A new commercial Hobart low temperature dishwasher was installed. it reached 50 ppm chlorine during the final rinse cycle. Test daily. Bleach sanitizer was at 100 ppm. Ensure that a bottle is always kept at the back area as well. General sanitation was satisfactory.
