Observation (CORRECTED DURING INSPECTION): Teeth of sliding mechanism in deli slicer was not properly sanitized (contains food residue).
Corrective Action(s): Deli slicer was cleaned-in-place / sanitized at time of inspection. Ensure that all users of the machine are aware of proper cleaning and sanitizing protocol.

Comments

Routine inspection conducted. Facility is in excellent sanitary condition. Facility offers pizza and classic Greek food.

A) Temperatures
- Both chest freezers, stand-up freezer, and upper freezer of domestic fridge are at -18C or below
- Lower cooler portion of domestic fridge, prep-coolers, and walk-in cooler at 4C. Thermometers available inside.
- Hot-holder not in use at time of inspection. However, water bath inside the hot-holder at 70C
- Toppings stored in cooling well above prep coolers are used within 2 hours

B) Storage
- Raw foods stored separately and below ready-to-eat foods and produce
- All foods were properly covered with lids at time of inspection
- Bulb in walk-in cooler fitted with protective cover
- All food products are stored 6" off floor
- No food products or drinks are stored in washroom - good

C) Hygiene and Sanitizing
- Two sanitizing pails present in facility (one at back dish area, one in the corner next to the prep coolers. Both pails contained 200 ppm chlorine residual at time of inspection. Cloths were immersed inside.
- Handsinks stocked with hot/cold running water, liquid soap, and paper towels in food prep area and employee washroom
- Sanitizing cloths are routinely washed and dried next to the pizza oven
- Large 2 compartment sink is used for warewashing. Dishes were soaked in soap solution in left compartment at time of inspection. Operator will immerse in sanitizer afterwards in right compartment before air drying - good.

D) Administrative
- Owner/operator has FoodSafe 1 certification
- Permit posted

E) Pests
- No visible signs of recent pest activity at time of inspection
