Observation (CORRECTED DURING INSPECTION): Noticed raw meats stored above a box of apples in the walk-in cooler.
Corrective Action(s): Relcoate the tray of raw meat to its designated cooler.

Observation: Build of dirt and food debris noted in the following areas and equipment:
1. Interior surfaces, shelving and door rails in the sliding door cooler located in the dry storage room.
2. Side walls and shelves in the 3-door cooler.
3. Under the bar shleving and beer cooler
4. Underneath the dishwasher and dish tables.
5. Underneath the hand sink.
6. Shleving in the walk-in cooler and floor especially under shelving.
Corrective Action(s): Through cleaning required to clean all of the abve areas and equipment ( By Feb. 25, 2018)
Clean and organize the staff washroom. ( Immediately)

Comments

* Ensure that meat slicer and all of its components are thoroughly cleaned and sanitized ( 200 ppm chlorine or through dishwasher ) after each use. (Corrected during inspection)
Meat slicer cleaned/sanitized every 2-4 hours if in continuous use. Do not mix soap with bleach for cleaning.
* Pressure wash the floor underneath the dishwasher to remove debris build up.
* Do not store clean aprons and glasses in the staff washroom hand washing area.

Walk-in cooler below 4 C.
Walk-in freezer below -18 C.
Sliding door cooler below 4 C.
Upright cooler at 2.5 degrees C.
Line cooler registered 4 degrees C or below
Hot holding of gravies, rice and potatoes > 60 C.
Liquid soap and paper towels available at the hand sinks.
Dessert cooler below 4 C.
Dishwasher final rinse: 71 C at the plate surface.
No sign of rodent noticed at the time of inspection.
