-Do not store any clean utensils or tray beside hand washing sink, install SS splash guard both side of the sink.

- Cake fridge and walk in cooler are </=4C
- walk in freezer </=-18C
- Quats spray bottles are present and contain 200ppm
- bleach present on iste for manual ware washing tested at 100ppm chlorine residual.
**3 compartment sink on site., organize the dishwashing area dirty zone vs clean zone
** Any dishwashing including sanitizing of tongs must be done in 3 compartment sink in the back or food prep sink in front NOT IN HANDWASHING SINK
** Organize the kitchen, remove any cardboard (lining) and keep all stuff off of the floor
** Noted a couple rodent dropping behind equipment and in the corner, clean it up and monitor. Facility has pest control once every two weeks, provide the last report for the area inspector
- All food stored 6" off the ground, dated and labeled
