Observation (CORRECTED DURING INSPECTION): Operator was storing a bowl of raw meat and cut yam in a beverage cooler at 11-13 C. Measured internal temperature of meat at 6-8 C. Discussed with operator that all potentially hazardous foods must be held at 4 C or lower.
Corrective Action(s): Required operator to remove and transfer both products to a working cooler at 4 C or lower; items transferred at the time of inspection.

Observation: Prep cooler by cooking equipment not able to hold 4 C or lower; temperature measured to be at 14-16 C. At the time of inspection, operator already knew about the cooler and called for service; no foods were being held in the cooler. Operator using domestic coolers in the side room to cold hold all potentially hazardous foods as 4 C or lower.
Corrective Action(s): Required operator to get the cooler fixed/repaired as soon as possible.
