All coolers were < 4 C, except the prep cooler, which was at 7 C. Adjust the cooler so that it can maintain a temperature of 1-4 C.
All freezers were < -18 C.
Hot held items were > 60 C.
No evidence of pests, traps in place.
Dishwasher final rinse cycle reached 75 C at the plate level.
General sanitation was satisfactory.
