Comments

Routine inspection conducted. The following observations were made:

1. General
- Facility is generally well managed and is in good sanitary condition
- Premise is well-lit and sanitation plan is in use

2. Temperatures
- Front-of-house prep cooler at approximately 4C (top) and 1C (bottom)
- Undercounter coolers by drive-thru and underneath soups at 4C or less. Undercounter coolers are now less cluttered.
- Walk-in cooler at approximately 2-3C
- Walk-in freezer at -20C
- Hot-holding cabinets all at 60C or above
- Hot-holder for reheating foods at approximately 72C
- Hot-holder for chili and soups at ~ 65C or more
- Temperature logs audited and were up-to-date at time of inspection. Logs are taken approximately every 2 hours

3. Hygiene and Sanitizing
- Hand wash station at front-of-house (left-side near hot-holder), next to walk-in cooler, and near drive-thru area stocked with hot/cold running water, liquid soap, and single-use paper towels. Hand wash station on right side of front service area is not functional since yesterday, and a work order has already been placed for repair
- Sanitizer dispenser releases 200 ppm quaternary ammonium compound (quats)
- Sanitizing pails all contain approximately 200 ppm quats
- Kitchen equipment is well maintained and in good sanitary condition
- Cutting boards and knives in sandwich prep area well maintained

4. Storage
- Food items are placed at least 6" off the floor
- All food items are appropriately packaged and protected from contamination
- Chemical storage area and dishpit area kept separate from food processing areas
- All food products are dated, FIFO system employed

5. Pest Control
- No evidence of recent pest activity at time of inspection

6. Administrative
- Permit is posted and up-to-date
- No supervisor on duty, but one employee has FoodSafe 1 taken approximately 2 years ago

A follow-up inspection will occur to check that the hand wash station has been repaired. Also, the hand wash station near the walk-in cooler is starting to clog - please have it serviced before it completely clogs

No other concerns at this time.

Specific comments: Audit of packaged items in coolers, including beverage mixes and greek yogurt, revealed no sources of artifical trans fats at time of inspection.

  • Food with the sole source(s) as naturally occurring trans fat (i.e. beef, sheep, lamb, bison and dairy products)
  • Employee lunches not purchased from the food service establishment
