Observation (CORRECTED DURING INSPECTION): Sanitizer not available in the BOH at the time of inspection. Staff sanitize surfaces only at the end of the night.
Corrective Action(s): All continuously used food preparation surfaces must be sanitized every 4 hours. Discussed with operator.

Observation (CORRECTED DURING INSPECTION): Staff member observed washing hands without the use of liquid soap (twice)
Corrective Action(s): Discussed handwashing with staff.
Ensure that hands are washed using liquid soap and warm water, and dried using paper towels. Hands must be washed between tasks, after touching face/nose/hair, after becoming contaminated, etc.

Observation: General sanitation of the facility was poor. Food debris and splatter observed in the following areas;
-walls around the upright mixer and 3 compartment sink
-on door handles and door seals of various cooler units
-in the tile grout of the flooring
-filter of the venting canopy
-on various food containers and lids
-on scoop and equipment handles
-in hard to reach areas such as corners and underneath equipment
-display cooler rails

Corrective Action(s): Conduct a deep clean of the facility. Ensure that floors are scrubbed and the above noted areas/items are cleaned thoroughly.

Note: cardboard being used to line shelves in the walk-in cooler. Cardboard is not permitted as a surface liner. Remove immediately.
