Observation: Debris observed in the following locations: under / behind ice machine, inside cabinet under handsink, under dishwashing sinks, around hot water tank and under both cooler units in the large storage room.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Observation: Low temperature sanitizing dishwasher is not currently sanitizing dishware 0 ppm chlorine.

Strong odours emanating from grease traps.
Corrective Action(s): Manager is aware of dishwasher malfunction. Dishwasher is used to clean dishware and utensils, afterwards all food equipment is immersed in 200 ppm Quaternary Ammonia for 2 minutes.
Technician has been contacted to service dishwasher later today.
Dishwasher needs to provide 50 ppm chlorine during sanitizing cycle.

Grease traps are to be serviced for cleaning and / or maintenance to address odour issues.
