Quats sanitizer in red buckets at 200 ppm
Quats sanitizer in third compartment sink at 200 ppm. Test strips on site.
High-temperature dishwasher reached 71C at the plate level upon final rinse cycle (min/max probe thermometer). Took 3 runs.
No signs of pests observed. Pest control contract with Orkin. UV light boxes for flies.
General sanitation is good
Food is stored 6" off the ground, covered
