302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) New dishwasher replaced was reading 68.8C to 70.9C at plate; gauge was reading under 180F according to logs posted on the wall. See thermo-label. 2) Containers storing wet wiping clothes measured 0ppm chlorine. Wet wiping cloth stored on dry dish used to wipe steam wands. Quats sanitizer strips were used to determine the chlorine strenghth. Repeat.
Corrective Action(s): 1) Repair/replace dishwasher so it can sanitize dishes at least 71C at plate. See correction order issued. 2) 100ppm chlorine sanitizer is required for storing wet wiping clothes used on food contact surfaces. Have a separate container for wiping down steam wands. Please review the Caffe Artigiano Sanitation Plans to determine chemical use, and prevent mixing of the chemicals. Recommend labelling the inserts storing sanitizer to distinguish between Quats and chlorine bleach. Obtain chlorine test paper.
