Lighting in both walk in cooler and freezer inadequate. Food Code requires at least 110 Lux for lighting in storage coolers. Currently, your facility uses light bulbs with 350 Luman strength. one lux is equal to 1 lumen/m2. Replace light bulbs with brighter ones. Recommend LED bulbs and match to max wattage capabilities to fixture. **Monitor change-over frequency of quats in spray bottles. Perhaps make it daily routine for staff to ensure 200 ppm residual is maintained.
