Comments

The kitchen is clean and is well organized. Please keep in this condition. A screen door has been installed. A gap on top needs to be closed. A generic food safety plan is posted in the kitchen. Food probe thermometers have been purchased. Staff have been taking temperature of the empanadas and bunuelos and recording on a laminated log sheet posted on the wall. Good work. A dough mixer mounted on wheels will replace the one in the kitchen. Operator is proposing to add cooking equipment to make tacos. Please submit plans prior to any renovations. The table top fryer will be replaced with a ventless unit. Please ensure that the equipment and installation will meet the of City of Delta Fire and Building requirements.
