Observation: Final rinse pressure gauge on the dishwasher is displaying 0 PSI when the final rinse cycle begins.
Corrective Action(s): Repair/replace the final rinse pressure gauge so that it is displaying the correct pressure (As per the manufacturers plate) when the final rinse begins.
Recommend purchasing a peak holding thermometer as discussed.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: 2 floor tiles observed damaged in front of the dishwasher. This violation was noted in my previous report on January 11, 2023.
Corrective Action(s): Repair damaged tiles as the floor is now uneven making it a tripping hazard. Ensure the floor has been properly leveled before installing the new tiles. Until repaired recommend placing a floor mat on top of the cracked tiles.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Handles on the sandwich prep cooler not properly cleaned as both were gritty with food product build up.
Correction: Ensure handles are properly cleaned and sanitized on a regular basis, Use a scub device to remove the build up of caked on food debris.

Code 302 noted on Routine inspection # BWOI-CQLSMB of Apr-05-2023
Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 2 tray inserts observed on the drying rack observed with food debris still affixed. These were removed to the 3 compartment sink to be warewashed at time of inspection.
Tray inserts observed stacked one on top of each other while still wet.
Correction: Ensure staff have been trained on how to properly prescrape/prerinse utensils before they are placed into the dishwasher.
Ensure tray inserts have properly air dried before they are stacked one on top of each other.
