209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Bowl of salad and batter left uncovered in the walk-in cooler. Portion cups used for dispensing gravy/sauce in the cooler drawer.
Corrective Action(s): Discard bowl of salad and batter in th walk-in cooler. Discard portion cups and use proper ladels to scoop gravy and sauce/

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease and food debris build up behind, in between and inside equipment. Drawer for chicken has thick protein build up and pieces of chicken on the bottom drawer. Dishwasher need thorough cleaning inside and out. Floors to be cleaned underneath equipment, in the back and in the dishwashing area. Fume hood now due for professional cleaning.
Corrective Action(s): Deep cleaning required on the items mentioned above. Good sanitation in conjunction with pest control monitoring ensure the facility is pest free and that food preparation is done safely. It is really important to implement good sanitation plan and sticking to the cleaning schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Dishwasher not dispensing chlorine sanitizer. New container of sanitizer was put in and chlorine feeder lines were checked and cleaned. Finally chlorine was able to flow from the feeder into the dishwasher.
Corrective Action(s): Dishwasher needs thorough cleaning inside and out to ensure it runs properly. There were grime build up where the feeding lines are attached to the dishwasher as well as the entire equipment. Ensure this equipment is also serviced regularly.

*Chlorine sanitizer (in bucket) was at >100 ppm.
*Walk-in cooler was at 3-4 deg C. Walk-in freezer was at -18 deg C.
*Prep line coolers were at or below 4 deg C.
*Temperature log was available and up to date. Ensure to check temperatures 2x daily.
-The last five days temperature were not done in the afternoon shift.
*Low temp dishwasher had chlorine residual of >100 ppm at plate surface.
*Active pest control in place - no signs of pest noted at time of visit
Staff on-site have valid Food Safe 1 certification
Bar area:
*Hand sink stocked with liquid soap and paper towels.
*Glass ware washer had chlorine residual of 100 ppm (plate surface).
*Coolers were at 4 deg C.
*Bucket of soap and water for cleaning and spray bottles of sanitizers (100 ppm bleach) were available.
