Good regulation of food volumes in inserts etc. *Paper towel dispenser at salad station jammed - make sure to have a look and fix as necessary. *Make sure to stock quats spray bottles at salad/dessert, server and bar stations at all times. Cooling units and foods below 4 C. Hot holding units above 60 C. Freezers all below -18 C. Dishwasher at 71 C (plate. No sign of drain flies and floor drains look generally good. *Keep an eye on the floor drain behind ice machine for seasonal fruit/drain flies. Things look good.
