Observation (CORRECTED DURING INSPECTION): Deli meats stored in the prep cooler that is not functioning at the time of inspection:
- pepperoni slices (14C)
- deli meats (10C)
- cooked ground beef (10C)
- ham. (10C)
The staff stated that these food items were just brought out from the walk in cooler.
Corrective Action(s): - Move all the cold potentially hazardous food items into the walk in cooler at < or = 4C.

- Provide ice and fully submerge cold food items in container in ice bath

Observation (CORRECTED DURING INSPECTION): 1) The stainless steel spiral of the dough mixer was stored directly on the floor.
2) The can opener is soiled with grease and dirt.
Corrective Action(s): 1) Store all equipment, utensils, and any food contact surfaces at min 6 inches of the floor.
2) Remove the grease and dirt. Sanitize with 100 ppm chlorine solution.
Date to be corrected: Immediately.

Observation (CORRECTED DURING INSPECTION): There was no paper towels inside the paper towel dispenser at the main handwashing station in the kitchen.
Corrective Action(s): Provide paper towels at the handwashing station to properly wash hands. All handwashing stations (including staff washroom) must be stocked with cold/hot running water, soap, and paper towels at all times.

Observation: Multiple food items were stored inside the walk in cooler uncovered.
Corrective Action(s): Cover all food items with proper lids or plastic wraps.

Observation: The prep cooler is not functioning and measured at 24C. The staff stated that a new prep cooler has already been ordered.
Corrective Action(s): Replace the prep cooler with a new one that maintains temperature < or = 4C at all times. Do not store any cold potentially hazardous food items inside this cooler in the meantime.

Observation: The only staff on duty could not provide a copy of the FOODSAFE certificate.
Corrective Action(s): Provide a copy of the FOODSAFE certificate on site and make available for review by the health inspector. At least one FOODSAFE certified staff must be working at all times.

Comments

- General sanitation is good.
- All other coolers (walk in) < or = to 4C.
- All freezers (walk in, chest) < or = to -18C.
- Hot holding unit at 60C
- Three compartment sink available for manual dishwashing. Chlorine solution available at 100 ppm. Ensure the water is at min 45C.
- Surface sanitizer available in red bucket with presoaked wiping cloths at 100 ppm bleach solution. Ensure to change regularly.
- Dry storage area is good.
- No signs of pest activity.
Note:
- Temperature log has not up to date (last recorded on July 29). Provided the staff with a new Fraser Health temperature log template. Ensure to record monthly and keep min three months of log for review by the health inspector.
- Tape and Styrofoam on the top corners of the walk in cooler have been removed and sealed. The material used to seal the corners is smooth, impervious, and durable.
