Observation (CORRECTED DURING INSPECTION): Frozen chicken was thawing in sink with no water.
Corrective Action(s): Thaw all foods under cold, running water or in the cooler overnight. Do not thaw foods out at room temperature. Chicken placed in food prep sink under cold running water at time of inspection.

Observation: Ventilation canopy requires cleaning and sanitizing. A significant amount of grease and dust noted in hood.
Corrective Action(s): Clean the ventilation canopy more often than once a month. Start with every 2-3 weeks.

Comments

- All hand washing stations were supplied with hot and cold running water, liquid soap, and paper towels. New paper towel dispenser at back hand sink has been installed and was working properly.
- Ensure hand washing stations are always kept free of obstructions and available for hand washing only. Any food prep (such as washing, thawing, etc.) must be done in the designated food prep sink.
- Three-compartment sink was properly set up for manual warewashing. 200 ppm Quats detected in sanitizing sink.
- Quats sanitizer solution available in spray bottle at 200 ppm.
- Mop sink maintained in sanitary condition
- Walk-in cooler measured to be at 3C
- Prep cooler with inserts measured to be at 2C
- Undercounter cooler measured to be at 3C
- Beverage coolers measured to be at 1C
- Freezer measured to be at -20C
- General sanitation satisfactory. Food storage practices satisfactory - all food stored off the floor and properly covered.
