Observation: 1. Observed mould build up in the ice machine stationed in the back storage area.
2. Metal rack above three compartment sink in unsanitary condition.

2. Clean and sanitize all shelves/racks prior to storing clean utensils.

Hand washing station stocked with liquid soap and paper towel
Hot and cold running water available at all sinks
QUAT sanitizer dispenser in good working order; detected 200 ppm of QUAT
Three compartment sink used for manual ware washing; observed adequate manual ware washing practices
Display cooler at the front measured at 11.4 C; there were two thermometers in the cooler, which read ~11 C. Temperature dropped to 5-6 C after ~15 minutes. When inquired, operator stated that the cooler was being used constantly during lunch rush and had the door open for a bit. Temperature logs are updated daily and observed 4 C or lower for this specific cooler for the last week (measured 3 times a day). Ensure to have the doors closed at all times when not in use to maintain 4 C or lower.
All other coolers at 4 C or lower; all freezers at -18 C or lower
No hot holding units at the time of inspection
All knives and scissors on magnet holder in sanitary condition
No signs of pests noted at the time of inspection
