Observation: There are items not in use in kitchen.
Corrective Action(s): Remove any unneeded items. Organize kitchen. Microwaves should be in the main kitchen area (near hand sink and not in a hallway at back.

Observation: Sanitation plan is not available on site.
Corrective Action(s): Keep written instructions showing the cleaning and sanitizing procedures for the gelato machine. This equipment should be NSF approved and manufacturer's instructions on cleaning and maintenance should be available. Keep written cleaning schedule available on site also.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Person on site today does not have Food Safe certification. Main operator was on site earlier today and has taken Food Safe but no copy of certificate is available.
Corrective Action(s): Keep copy of operator's valid Food Safe certificate on site. If operator is absent, at least one person per shift is to have Food Safe level 1 certification. Certificates now expire after 5 years.

Scooped ice cream/gelato on menu today. For summer, the operator is proposing to sell crepes, waffles, hamburgers (pre-cooked), veggie burgers.
Check with Fire department before selling cooked items to ensure that they approve. Deep fryers are not being used.
One washroom has been converted into a storage room. Check with the City regarding the removal of a washroom regarding the number of washrooms required by the City.
No person on site today with Food Safe level 1. - see above.
Cooler used to store milk is at 4 C or colder - good.
Ice cream is from an approved dairy source.
Gelato is made on site using pasteurized milk/cream. You must be able to provide accurate ingredient information.
No raw egg ingredients in gelato made on site.

Dishwasher is not in use. Triple sink is available to wash, rinse, sanitize, and air dry utensils.
