- General sanitation is satisfactory.
- Main handwashing station in the kitchen supplied with hot/cold running water, soap, and paper towels.
- High temperature dishwasher reached 78C at the plate's level during the final rinse cycle.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity.

Temperature Control:
- All coolers in the main kitchen and dry storage area maintained at < or = 4C.
- All freezers in the main kitchen and dry storage area maintained at < or = -18C.
- Ensure to keep up to date on temperature logs.
- Ensure to provide working thermometers in all coolers and freezers.
- Better organization of food is needed in the upright coolers.
