Follow up inspection:

Prep Cooler:
The prep. cooler next to the pizza cooler was at 3.9 degrees C (4 degrees C / 40 degrees F or less).

Pizza Cooler:
The pizza cooler was at 5.8 degrees C on the left side and 7.6 degrees C in the center (above 4 degrees C). The person in charge mentioned that if they adjust the pizza cooler below 4 degrees C, it will freezer the entire cooler line.
It was discussed with the person in charge that documentation must be kept for the toppings in the inserts of the pizza cooler. All cold potentially hazardous food must be discarded after 4 hours above 4 degrees C in the inserts. No potentially hazardous food (e.g. cheese, meat, prepped vegetables, pasta, etc.) are not stored inside the bottom portion of the pizza cooler unless it can be maintained at 4 degrees C or less.
The person in charge documented the time for the food in the inserts on a white board at the time of inspection.
*Please obtain a timer to keep track of the pizza toppings using the 4 hour rule whereby all cold potentially hazardous foods are to be discarded if they are above 4 degrees C for more than 4 hours.
