Observation (CORRECTED DURING INSPECTION): Milk stored in under counter cooler (near host station) at internal temperature of 13 degrees C.
Corrective Action(s): 2 gallons of milk discarded by manager at time of inspection. Please ensure that cold potentially hazardous foods are stored at 4 degrees C or less to limit the growth of potential pathogens and/or the production of toxins.

Observation (CORRECTED DURING INSPECTION): 1. Raw shell eggs stored directly above ready-to-eat foods (limes, apples) in walk in cooler.
2. Ice scoop stored with handle directly in contact with ice in bar area.
Corrective Action(s): 1. Ensure that raw foods such as shell eggs and meats are not stored above ready to eat foods to limit potential contamination if there is leakage.
2. Ensure ice scoop is stored safely (e.g. in a clean, dry container) to limit potential contamination from the handle.

Observation: 1. Ambient temperature of under counter cooler near host station at approx. 13 degrees C.
2. Door seals are cracked and peeling on central preparation cooler (across from flat grill)
Corrective Action(s): 1. Have host station under counter cooler adjusted or serviced so that it can maintain 4 degrees C or less. Ensure that no potentially hazardous foods are stored in this cooler until such time. Date to be corrected by: August 4, 2017.
2. Provide new door seals for central preparation cooler to minimize loss of cold air and facilitate proper cleaning. Date to be corrected by: September 6, 2017.

- Hand washing stations supplied with hot and cold running water, liquid hand soap, and single use paper towels. Hand washing station near pizza prep area has been repaired since previous inspection.
- Quats sanitizer available in spray bottles at 200 ppm. *Reminder to ensure all bottles are properly labeled to identify contents.
- Low temperature dishwasher measured 50 to 100 ppm chlorine in rinse residual at utensil surface.
- Bar glass washer measured 12.5 to 25 ppm iodine in rinse residual
- No evidence of pest activity noted
