Observation (CORRECTED DURING INSPECTION): The prep cooler was not fully emptied after noticing the prep cooler wasn't able to hold food temperature at 4oC or less
Corrective Action(s): Ensure all food including meat and vegetables are removed from any cooler when a cooler requires a repair. Do put food in a cooler unless the cooler is serviced properly. All foods in the prep cooler were moved to another prep cooler during inspection.

Observation: Noted excessive grease buildup around the deep fryer and the wall cover behind as well.
Corrective Action(s): Excessive grease buildup will increase risk of kitchen fire and may create pest infastation. Remove grease from the above noted area. Daily cleaning is required at the end of each day. Clean today.

Observation: The far end prep cooler (beside the deep fryer) was not able to hold the temperature less than 4oC. The ambient air temperature in the cooler was @ 7-9oC
Corrective Action(s): The operator had already called a technician to service the cooler.
Do not use the prep cooler until the cooler is serviced and able to hold tempertuare less than 4oC.
