Corrective Action(s): Ensure staff have been trained on how to properly clean the slicer after use. Premises does have a flashlight available to check the work.

Monitoring logs being maintained for all cold holding equipment including the dishwasher
***Add hot holding to your temperature logs
***Install a heavier base for the paper towels at the hand sink as discussed
Dishwasher at 75c (At plate level). Soap dispensed into the wash cycle
Glasswasher logs being maintained: Glasswasher tested at approx 80ppm chlorine and 130F. Soap dispensed into wash cycle.
