Comments

All fridges are maintaining foods at 4 degrees Celsius or colder. Ensure lid on pizza prep table remains closed between making pizzas due to heat of pizza oven. Freezer believed to be on defrost cycle ensure that it returns to - 18 degrees Celsius. Liquid soap and paper towel at handsinks. Quat sanitizer dispenser measured 200 PPM Quat residual. Temperature logs are being maintained. Ensure dishes are being washed using the three compartment sink technique. ie wash dishes in warm soapy water, rinse off soap and place in a clean sink of no rinse quat sanitizer at 200 PPM residual for 2 mins. Allow to air dry.
