302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer observed in extremely poor sanitary condition. Staff were not aware blade guards could be removed. Behind guards, along centre of blade, and caked between the rubber seals were huge deposits of dried on food debris.
Corrective Action(s): Staff began cleaning machine with EHO instruction at time of inspection. Upper, back, and side guards removed and put in sink to soak off dried on debris. Base of machine getting worked on with a brush and cloths.
- all food contact equipment must be thoroughly washed, rinsed, and sanitized after use. Never let food dry on!
- a small brush is needed to help facilitate thorough cleaning
- a new spray bottle is needed as current one is barely functional

Observation (CORRECTED DURING INSPECTION): 1) Numerous dirty rags throughout premise found on counter tops (food contact surfaces)
2) Found both clean and dirty knives mixed with other items such as a rubber mallet & screw driver
Corrective Action(s): 1) Rags were transferred to 100-200ppm sanitizer buckets at time of inspection. Storing rags in this manner will prevent bacterial growth, while keeping rags white and your counter tops more sanitary.
2) As noted in other violations, keep food equipment separate from non food equipment. Never store clean and dirty equipment together.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General sanitation of facility is poor. The following areas need to be organized, removed of excess clutter, then cleaned up:
- behind pizza oven
- ventilation hood
- floor and walls of walk in cooler
- food (and spice) storage buckets throughout facility
- dry storage area has chemcials and equipment unrelated to food service (WD40, drills, tools, etc)
Corrective Action(s): Clean the above areas. Remove all non-food related items from the premise. Items like seasonal signs must be physically separated from food storage.

Singular hand sink supplied with liquid soap, paper towels, hot/cold running water
** No hand wash station is available for staff at pizza prep station. It is HIGHLY recommended a hand wash station be installed in pizza assembly area
Provided signs for dishwashing steps. Bleach available on site and is in use
Bleach buckets were tested at 100-200ppm. Good. Use them!
Pizza prep cooler measured 5C on North side of store, while 7C was measured on South side (where inserts are placed).
** Service this machine. Please have a fan installed to increase air circulation in this large, old cooler.
** Records are not getting maintained. As discussed, you are to check all refrigeration systems daily, and record your measurement on log sheets. If there have been repairs, adjustments, servicing, etc, also record this in your logs. Keep logs on site for 3 months
Freezers all functional, with exception of one large chest freezer which is getting cleaned.
** Keep all personal food items in a separate refrigerator or freezer! Have designated equipment for personal items labelled.
Walk in cooler at 2C
**Keep all foods in coolers and freezers protected from contamination. This means wrapping things like large pieces of ham before storing.
