Observation: Dirty mop water stored in mop bucket in the outside area near the walk-in cooler.
Corrective Action(s): Dirty mop water must be discarded as soon as cleaning is completed so it does not attract/breed pests.

Adequate handwashing stations not available for employees [s. 21(4)] (Handwashing station at the front area had a basket in the basin. Hot water supply was not turned on at the time, as it is leaking.)
Comments

Follow-up to previous inspection - RWOG-B4JT2C:
- Handwashing station now has supply of hot water; please ensure that this is available at all times
- Ingredients not kept in the line cooler are now being kept in ice water
- Sliding glass cooler now measures 2C, working thermometer now available

To be completed by follow-up in 1 month:
- Thorough cleaning in areas noted
- Chest freezer must be repaired or replaced as lid has completely fallen apart

Submit food safety plan for the fermenting rice found near the hot water heater; until it has been approved, do not use this in any of your dishes. Staff stated that it is used in "boiled steamed rice ball in sweet rice wine with egg"
