Observation (CORRECTED DURING INSPECTION): Wooden butcher blocks require cleaning and sanitizing. Chlorine sanitizing solution is at 50 ppm.
Corrective Action(s): Surfaces of wooden butcher blocks are to be smooth and easy to clean. Follow your sanitation plan and cleaning schedule. Note that the wiping cloths are now being stored in a stronger sanitizing solution (100-200ppm chlorine) - corrected during inspection.

212 - Operator has not provided acceptable written food handling procedures [s. 23]
Observation: Updated food safety plan for menu items, including chicken broth, required.
Corrective Action(s): Provide copies of your food safety plan to Fraser Health. Quick cooling of hot food: When food tempearture falls below 60 C, cool within 2 hours to 20 C (room temperature) and within 4 hours to fridge temperature (4 C).

304 - Premises not free of pests [s. 26(a)]
Observation: Main kitchen pest monitoring traps empty and no evidence of pests in this area. Food is stored in pest proof bins.
Evidence of rodents (mice) was noted in the bar area which currently is not in use (take out only).
Corrective Action(s): Clean bar area and continue monitoring. If there are any holes where pests can enter, seal holes. Consult with licenced pest control if needed. Premises must be free of pests.

Observation: General cleaning is being done. Deep cleaning in hard to reach areas can be improved.
Corrective Action(s): Clean bar floor area, under glassware washer, and in hard to reach areas. Follow a written cleanining schedule.

501 - Operator does not have FOODSAFE Level 1 or Equivalent [s. 10(1)]
Observation: Operator advised that his Food Safe Level 1 certificate is more than 5 years old. One staff person has a valid Food Safe certificate (as per Operator).
Corrective Action(s): Operator to update his Food Safe Level 1 (or equivalent) by December 2021 and provide a copy to Fraser Health.

Comments

Walk in, prep cooler and bar cooler are at 4 C / 40 F or colder - good.
Freezers (wallk in and 2 door upright) are at <-18C - good.
Hand washing - sink used for hand washing has hot/cold water, liquid soap, and paper towels in a dispenser. Room is to be used for hand washing/laundry only.
Non-latex disposable gloves are also available and used by food handling staff.
Garlic is stored in the fridge.
Defrosting chicken in cold water. Other foods are being defrosted in the walk in cooler.
Hot holding - not observed today but rice is steamed in large steamer and then hot held. No room temperature storage of cooked rice - good.
Cooling of hot foods - update your food safety plan -- see above.
Walk in cooler - raw meats below other foods.
Food Safe - see above.
Sanitizing solution for wiping cloths - see above. Posters provided.
Separate cutting board for vegetables which can go through dishwasher.
Commercial dishwasher in main kitchen has a final hot water sanitizing rinse - >82 C at gauge and >71C measured inside of the machine.
Bar area closed (take out only) and glassware washer is not in use.
General cleaning is good. Mechanical exhaust filters are scheduled to be cleaned tomorrow. See above.
Pest control - see above. Monitoring is in place. A pest control company is contracted for the outside of the building. Food is in pest proof bins. Back door is screened.
Front area washrooms (for staff and customers) have hot/cold water, liquid soap, and paper towels in dispensers.
Operator is following Covid-19 safety procedures. Masks are worn as per the latest (August 25, 2021) Provincial Order respecting face coverings (mandatory inside of restaurants).
