Premises has been cleaned. Floor of kitchen under equipment has been cleaned and mechanical exhaust/filters have been cleaned - good
Dishwasher chlorine level was at 50 ppm after several runs. Verify chlorine concentration is at least 50 ppm using test strip (daily) - OK
Water temperature at the double sink is 45C for the hot water used for cleaning and hand washing - OK
Dishwasher (single compartment, low temperature using chlorine) is at 45C - OK
If water temperature falls below 45C or chlorine level falls below 50 ppm - service dishwasher.
