Observation (CORRECTED DURING INSPECTION): Both ProQuat sanitizer bottles did not register any quats residual. Discussed with operator - staff filled bottles with incorrect chemical. Emptied and re-filled, but not checked.
**Main quats feed ok, although the water was very hot. Make sure the hot and cold water balanced such that the outgoing water temperature does not exceed 75 F for the sanitizer solution.
**200 ppm is the optimal concentration.

Discussed proposed addition of a lunch sandwich service. Make sure the sink is fixed up as discussed (loose faucet and drip). Make sure paper towels always stocked for easy handwashing. Submit Food Safety Plan to this added service.

Dishwasher and glasswasher working OK.
Cooling units all good.
Handwashing facilities good.

**Watch the quats feed. Make sure staff are checking the main feed daily.
