Items corrected from previous inspection:
311 - Light fixture above the kitchen has been repaired. Fridge unit secured in place.
315 - Thermometer installed in the fridge. Probe thermometer available for cooking and hot holding.

Inspection:
Hand sink stocked with liquid soap and paper towels.
Fridge (potentially hazardous foods stored) was at 3-4 deg C.
Beverage fridge at 5-7 deg C.
Freezers were at or below -18 deg C.
Hot holding for ham was above 74 deg C.
Hot holding for hot dogs, soup and gravy was at or above 60 deg C.
Temperature log was available but not up to date. Business is open only on Wednesdays (during auctions) and time varies (i.e. 1.5 - 3 hours sometimes may be longer).
**Post temperature log so that it is visible and thus not forgotten.
Active pest control in place - monthly visit.
Bleach sanitizer available at >100 ppm.
Staff (operators) have valid Food Safe 1 certification.
General sanitation was satisfactory.
NOTE: Provided operator with "3 comp sink ware washing sign" - posted at time of visit
No frying done; however, fume hood vents have grease build up from previous operation. These vents need to be cleaned thoroughly.
