Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: High temp dishwasher noted between 66-69 C at the plate during 10 cycles. 1 cycle reached 72.6 C at the plate with probe thermometer once. Final rinse cycle gauge indicates temperature reached at least 184 F.
Correction: Ensure dishwasher can consistently reach 71 C or higher at the plate to properly sanitize dishes. Call dishwasher in for service and monitor temperature regularly until unit is fully serviced. Manual sanitizing step may be required if 71 C is not reached.

Observation: High temp dishwasher run multiple times - temperature at the plate noted with min/max probe thermometer by both EHO and Exec Chef between 65-70 C. 71 C reached once.
Correction: ***REPEAT VIOLATION***

-Dishwasher is not reaching 71 C or higher consistently to sanitize dishes.
-CORRECTION ORDER remains in place

***In the interim to remain OPEN, dishes must be manually sanitized in large pot sink after running dishes through the dishwasher. If dishes are not properly sanitized after washing the premises will be closed until such time that the high temperature dishwasher is functioning properly again.
***A dishwasher log must be developed where the dishwasher will be verified it is reaching 71 C or higher daily and if not it must be serviced immediately. Records must be available onsite for review by FHA upon request next inspection

***Contact FHA once dishwasher has been repaired
