Observation (CORRECTED DURING INSPECTION): 1. Cilantro, 11C-15C, stored in covered container at room temperature. Operator said this was stored at room temperature for less than 2hrs.
2. Paneer, thawing at room temperature in small batch bag. Surface 10C.
Corrective Action(s): Operator place all items above in cooler.
Ensure to thaw in the coolers.
Items stored at room temperature for 2hrs or more must be discarded.

Food Handler Hygiene
o Hand wash stations are fully supplied with hot and cold running water, liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation
o Staff washrooms appear clean and are fully supplied for hand hygiene

o Food in cold holding Freezers are below -18C

Food Processing and Food Protection
o Food Storage - Food is stored in covered containers.
-Paneer from an approved source; chicken from approved supplier. Ensure to keep receipts on site for tracking and inspection purposes.

Maintenance and Sanitation
o 3 Compartment Sink is fully supplied with bleach
o Sanitizer bottles/buckets - have >200ppm Quats; Operator also mixes bleach with water for sanitizing.
o Storage of chemicals is separate and away from food
o Pest control - there are no signs of pests at the time of inspection.
