Observation: Fruit fly infestation persists. Minor to moderate problem especially notable in the beverage area.
Corrective Action(s): Improved sanitation and breeding source reduction will help control fruit fly populations. Continue to get advice from Pest Control and be aggressive with source reduction and cleaning to break the breeding cycle of the fruit flies.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Hard-to-reach areas of premises continue to be a challenge to get clean. Crevices and gaps between equipment, areas behind and around legs of equipment, and creases between pieces of stainless steel at sinks, and along work surfaces under maintained and may be contributing to fruit fly breeding opportunities. This is especially evident in beverage station.
Corrective Action(s): Continue to improve cleaning cycle and/or quality to improve general premises sanitation. Without a stronger commitment to cleaning it will be difficult to get rid of fruit fly infestation.

Comments

Observed the following improvements:
- removed deteriorated shelving unit in food prep station. OK.
- Hashbrown and McChicken freezers defrosted and cleaned up; *Note - McChicken door does not fit flush and will refrost quickly again. Discussed with operator and it is scheduled for replacement.
- Walk-in freezer somewhat cleaned up and is better organized. Wheeled trolleys and floor quite built up with old food debris. Trolleys can be systematically taken out of freezer and better cleaned.
- Conveyor belt area improved;
- Beverage area improved, but continues to be a fruit fly harbourage area; Staff need to investigate and remove breeding opportunities. Discuss with Pest Control.
**Discussed design and operational issues facing premises. Continued improvement to cleaning is desired outcome this facility will work towards.
**Ice machine is in need of a reset cleaning and sanitizing.
