Observation: Some mice droppings noticed behind the dough mixer and in the compressor storage cabinet. Some droppings noticed in the dry storage room as well.
Corrective Action(s): Clean throughly to remove droppings and sanitize with bleach. You must keep equipment free of flour and food build-up for long-term success of the pest control program ( immediatley). Please forward a copy of the latest pest control inspection report.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Grease spills noticed around the used oil collection bins. Any food and grease spills attract rodents.
Corrective Action(s): Oil collection bins and garbage bins must be kept on a paved area to allow for easy cleaning and pressure washing.
Clean all oil and food spills to disourage rodents ( By Sep 5, 2019).
*Ensure to keep the back entrance door closed to prevent entry of pests.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of food debris noticed behind and around the dough mixer, behind and underneath the pizza pan holder, underneath the dishwasher, under the dishwashing sink and floor in most corners. The dishwasher strainer is not emptied and cleaned every day.
Corrective Action(s): You must clean all of the above areas throughly followed by a bleach mop. Dishwasher strainer must be cleaned and emptied every day. Clean the dough mixer and area around it every other day to remove flour build up. Degrease all cooking equipment.
Do not keep dirty knives etc behind the microwave ovens. ( August 31, 2019)

Corrective Action(s): Ensure that all spray bottles of chemicals, cleaners and sanitizers are labelled and are stored away from food products.( immediately). Use only 1 teapoon bleach per litre of water to make sanitizer solution.

* Do not microwave food in plastic margarine buckets. Use only commercial grade glass or other microwave safe containers.
It is recommended to use stove or oven to reheat foods prior to placing foods in the warmers.
* Walk-in cooler shelves require cleaning to remove food build up ( By Sep 15, 2019).

Cooling wands are used to cool meat sauce. Ensure to cool the sauce from 60 to 20 C within 2 hours and 20 to 4 C within the next 4 hours.
