Observation: Food safety plan requires updating as menu has changed since the last plan was reviewed by Fraser Health
Corrective Action(s): Spoke to operator and kitchen manager about updating food safety plan to reflect the current menu. Provided operator with a copy of the food safety plan that was reviewed by Fraser Health in 2005. Provided operator with information on how to develop food safety plans.

Reviewed food handling procedures for pork ribs with operator and kitchen manager. Advised against reheating (in deep fryer) of frozen pork ribs as this can increase the likelihood of improper reheating. Recommend reheating a thawed product instead. Also discussed the importance of time and temperature monitoring throughout food handling processes, but in particular thawing, reheating and cooling steps. Time and temperature monitoring procedures need to be incorporated into the updated food safety plan.
