Observation (CORRECTED DURING INSPECTION): Sanitizer in spray bottle tested less than 200ppm.

Corrective Action(s): - Quats sanitizer at 200ppm required to properly sanitize the food contact surfaces.
- OPerator replaced Quats from dispenser and measured at 200ppm.

Observation:
- Dry food storage area was not in a santary condition. Flour spilled on the floor.
- Food contact surfaces like tables were not in a sanitary condition.
- Proofer was not in use during inspection. Grease built up on the fan guards and the caulking.
Corrective Action(s): - Clean the dry food storage area.
- Thoroughly Clean adn sanitize the tables, the dough machines, the shelving units inside the coolers and freezers.
- Throughly clean and sanitize the proofer.

Comments

Routine inspection conducted with the presence of 2 operators,.

- General sanitation needs improvement.
- Hand sink and staff washroom fully equipped with hand soap, paper towel and hot/cold running water.
- Upright cooler at 2.5C. Food containers properly covered and raw meat stored on the bottom of the shelf.
- Upright freezers temperature satisfactory, food frozen solid.
- Sanitizer concentration at the dispenser tested 200ppm. Spray bottle < 200ppm, see violation.
- Flour bags stored off floor in dry storage area.
- Back door closed tight, no pest activity observed during inspection.
