Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Meat slicer observed in extremely poor sanitary condition. Staff were not aware blade guards could be removed. Behind guards, along centre of blade, and caked between the rubber seals were huge deposits of dried on food debris.)

In order of violations and recommendations from your last inspection:
- knives have been cleaned and sanitized and placed in a container used for food equipment storage only. Good
- meat slicer has been cleaned (with a rag). Brushes have been purchased as requested. Before using today, use these brushes to get into hard to reach crevices & corners. Sanitize after washing using your spray bottle!
- new spray bottle head acquired
- general sanitation slightly improved (this was given a 1 week deadline - ongoing). Cleaning and organizing of back storage area MUCH better.
- the following areas remain: under pizza oven, ventilation hood, walk in cooler floors and walls, food storage buckets
- prep cooler to be serviced and increased circulation. If your usual technician is unavailable, call somebody else
- personal food has been separated from restaurant food, except in freezers. Complete the separation and label your small standing cooler for staff use only. No restaurant food allowed in here.
- Records must be maintained and kept on site for 3 months
