A follow-up inspection was completed: - Dishwasher rinse cycle had [Cl2] between 50-100ppm. Test strips present. Dishwasher can be used to wash and sanitize, manual dishwashing is not required. - Cleaning has been on-going and improvement seen in the dry storage area, the exhaust canopy, the bread making station cooler and station, and the back prep area. Cleaning still occurring in the dishwashing area and back prep area. - A cleaning company will be contracted every 2 weeks to complete a cleaning of the premises. Staff do a detailed cleaning of the premises on Monday and Tuesday, and daily cleaning every night. - Shelving units ordered for the area by the back door. - Improvement seen in sanitation level. Keep it up. - Plumber arriving this week to unplug the mop sink and to repair the leaking drain under the sink in the dishwashing area.
